Ginger and Honey Roasted Parsnips

I started making these almost 10 years ago. They are a great and simple side dish that are delicious enough to serve for friends.


Preheat oven to 450

6-8 Medium Parsnips cut into baton shapes (like big wedges)

Toss parsnips in olive oil and lay in a single layer on a baking sheet

grate fresh ginger over them (I use about an inch)

*freezing ginger makes it really easy to grate

Roast for about 20 minutes or until lightly browned and softened

Drizzle with about 2 tbsp of local honey and a dash of salt and pepper


These are delicious served with wine and great friends.

    Mmm I just got introduced to parsnips last year and they definitely will be making an appearance on our Thanksgiving table.
