Baked Sweet Potato and Beet Chips

These Veggie chips are so beautiful and delicious. Making chips is a great way to use up your CSA root veggies especially if you already own a mandoline.

Beet Love

Preheat your oven to 400*

Set your mandoline to it’s medium setting (i like thick chewy chips)Peel 4 beets and cut the ends off

Peel 2-3 Sweet potatoes and cut the ends off

Use the mandoline and slice everything thinly

Toss the sliced veg in a bowl with olive oil and salt

Spread in a single layer on a baking sheet (or 2) and bake for 15-20 minutes or until the edges are crispy and curly. You may need an extra 5-10 minutes depending on your oven.
Let them cool on the baking sheets- they will crisp up as they cool.
