Curry Pumpkin Seeds

Getting busy carving your pumpkin for Halloween already??

Don’t forget to save the seeds! They are a great vehicle for flavor and pack a ton of health benefits. They are full of manganese, vitamin E, and zinc…all powerful antioxidants.

Remove the pumpkin seeds and rinse well. Lay them out to dry on a paper towel.

Preheat oven to 450

Toss with 2 tbsp olive oil

1 tsp salt

1 tsp curry powder

Spread the seeds on a baking sheet in a single layer

Roast for 8-10 minutes (watching from 8 mins on to make sure they don’t burn)

 

Note: You can sub any spice you like…cinnamon and sugar work well, salt and pepper, cayenne, even cocoa powder!
