Whole Roasted Branzino with Dill Butter over Thinly Sliced Potatoes and Black Radishes

This recipe was originally adapted from http://www.bonappetit.com and it is a general recipe for roasting fish:

Cleaned whole fish plus acid (lemon/wine) plus an herb for flavor plus a fat =roast until opaque

preheat oven to 350

Thinly slice your potatoes and radishes (if you have them). I used a mandolin set to the medium setting, about 1/4 inch thick.

Arrange them on a baking sheet and toss with Olive Oil, S + P, and about a tsp dried thyme

Roast for around 15 minutes or until fork tender

Set Aside

Ingredient List
5 medium potatoes

Olive Oil

1tsp dried thyme

Put fish in 9×13 baking dish (i like glass)

Salt and Pepper the fish (inside and out)

Stuff with sliced lemons, rosemary, and a tab of compound butter

Pour over the fish- 1/4 cup water, the juice from one lemon, 2 tbsp gin 2 tbsp chicken stock (this can be subbed for dry white wine but I love the flavor of the gin and the dill married)

Put a tab of compound butter on top of the fish

Roast for 15 minutes

Remove from oven and sprinkle sliced tomatoes and olives around the fish

Tuck the potato and radish slices around the fish (they don’t all have to fit…i had extra)

Roast for another 20 minutes

Sprinkle with sea salt and enjoy!

2 Tomatoes (we used plum tomatoes bc that’s what we had from http://www.roxburyfarm.com)

chopped olives (kalamata is nice here

1/4 cup water

2 tbsp gin

2 tbsp chicken stock
