This recipe was adapted from Ina Garten’s Recipe for applesauce (although I didn’t use half the ingredients she did)…i liked her cooking method over traditional applesauce making because she makes hers in the oven rather than on the stove top. I used the ugly beat up apples that were given to me, not even sold. They were bruised, scarred, busted, covered in holes, and perfect for applesauce.
Roughly 6 lbs of apples (i used macintosh bc that is what I got from Pachamama Farm in Ossining, NY)
around 6 lbs of apples peeled (not religiously), cored, and quartered
4tbsp butter (divided into little bits)
1/2 cup packed brown sugar
Generous heap of cinnamon (~1-2Tbsp)
The juice and zest of 1 lemon
pinch of salt
Put everything into a dutch oven and bake at 350 for 1.5 hrs. I don’t bother preheating the oven for a recipe like this…it really doesn’t need to be hot when you put it in. A pie crust….that is another story.
You will be amazed when this applesauce comes out of the oven. I thought I would have to puree it a bit but it literally comes out with the perfect texture, looking like dark golden deliciousness and smelling amazing. I couldn’t wait for it to cool…so I ate it hot, with a spoon.
I spent the entire day today with my sister trying to figure out what else I could eat smothered in applesauce. This is what I came up with:
Pancakes with applesauce
applesauce in oatmeal (for sweet P)
applesauce in yogurt
Warm applesauce on ice cream was the winner…I sprinkled a dash of sea salt on top and it almost tasted like PIE!
It was all gone by 2pm today 🙂
